Air Fryer Egg Rolls

Crispy air fryer egg rolls filled with vegetables and protein for a quick snack or appetizer.

Ingredients

  • 10 egg roll wrappers
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped green onions
  • 1/2 cup cooked ground chicken or tofu
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 1 tbsp vegetable oil

Instructions

  1. Mix cabbage, carrots, green onions, cooked protein, soy sauce, garlic powder, and ginger powder in a bowl.
  2. Place 2 tbsp of filling in the center of each egg roll wrapper.
  3. Fold the sides inward, then roll tightly, sealing with water.
  4. Brush each egg roll lightly with oil.
  5. Preheat air fryer to 375°F (190°C).
  6. Arrange egg rolls in a single layer in the air fryer basket.
  7. Air fry for 8-10 minutes, turning halfway, until golden brown.
  8. Serve warm with dipping sauce.

Notes

  • Use pre-shredded coleslaw mix for faster prep.
  • Swap chicken for shrimp or mushrooms for variation.
  • Keep unused wrappers covered with a damp towel to prevent drying.
