Instructions

  1. Preheat oven to 300°F (150°C).
  2. Season the chicken with salt, pepper, and thyme.
  3. Heat olive oil in a large pot and brown the chicken on all sides.
  4. Remove the chicken and sauté onions, carrots, and garlic until softened.
  5. Return the chicken to the pot and add potatoes and chicken broth.
  6. Cover and cook in the oven for 6-8 hours until tender.
  7. Serve hot with the vegetables and broth.

Notes

  • You can add other root vegetables like parsnips or turnips.
  • For deeper flavor, brown the chicken well before slow cooking.
