Almond Linzer Cookies

Classic almond linzer cookies with a jam-filled center. These buttery, nutty cookies are perfect for tea time or gifting.

Ingredients

  • 1 cup almond flour
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup unsalted butter (softened)
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting

Instructions

  1. Mix almond flour, all-purpose flour, sugar, and salt in a bowl.
  2. Add vanilla, egg, and butter. Mix until dough forms.
  3. Chill dough for 1 hour.
  4. Roll dough to 1/4-inch thickness.
  5. Cut circles using cookie cutter. Make small center holes in half the cookies.
  6. Bake at 350°F for 12-15 minutes until edges are golden.
  7. Cool completely.
  8. Spread jam on whole cookies. Top with holed cookies.
  9. Dust with powdered sugar.

  • Dough must be chilled for easy handling.
