  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon ginger, grated
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat some oil over medium heat and sauté the onion, carrots, and celery until softened.
  3. Add the garlic, turmeric, cumin, and ginger, and cook for another minute.
  4. Stir in the lentils, vegetable broth, and diced tomatoes.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until lentils are tender.
  6. Add the spinach and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste before serving.
