Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp turmeric powder
  • 1 tsp black pepper
  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté for 2 minutes.
  3. Stir in turmeric and black pepper. Cook for 1 minute.
  4. Add chicken and cook until lightly browned.
  5. Pour in chicken broth and coconut milk. Bring to a boil.
  6. Add carrots and celery. Reduce heat and simmer for 20 minutes.
  7. Season with salt to taste.
  8. Garnish with fresh cilantro before serving.
