Apple Oatmeal Cookies

Delicious and healthy apple oatmeal cookies that are perfect for a snack or dessert.

  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 cup unsweetened applesauce
  • 1/2 cup diced apples
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, whole wheat flour, brown sugar, cinnamon, baking soda, and salt.
  3. In another bowl, combine the applesauce, honey, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Fold in the diced apples and raisins if using.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are golden brown.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container for up to a week.
  • Feel free to add nuts or other dried fruits for extra flavor.
  • For a vegan version, substitute honey with maple syrup.
