Apple Pie Enchiladas Dessert is a warm, sweet twist on a classic comfort dessert. With cinnamon-spiced apples wrapped in soft tortillas and drizzled with caramel, it’s a fast and flavorful treat.

  • 4 large flour tortillas

  • 2 cups peeled and diced apples (about 3 medium apples)

  • 1/2 cup granulated sugar

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1 tablespoon lemon juice

  • 1 tablespoon unsalted butter

  • 1/2 cup brown sugar

  • 1/4 cup water

  • 1 teaspoon vanilla extract

  • 1/2 cup chopped pecans or walnuts (optional)

  • 1 cup caramel sauce (store-bought or homemade)

  • Vanilla ice cream (for serving, optional)

Instructions

  • Preheat oven to 350°F (175°C).

  • In a medium saucepan, combine apples, lemon juice, granulated sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until softened.

  • Spoon the apple mixture evenly into tortillas, roll up, and place seam-side down in a greased 9×13-inch baking dish.

  • In a small saucepan, melt butter, brown sugar, and water. Bring to a boil, then stir in vanilla. Pour over tortillas.

  • Bake uncovered for 20 minutes.

 

  • Drizzle with caramel sauce before serving. Add a scoop of vanilla ice cream if desired.

Notes

For extra crunch, toast the nuts before adding. Granny Smith apples offer a nice tart contrast, but any firm apple works.
