  • 350ml water
  • 100g sourdough starter
  • 10g salt

Instructions

  1. In a large bowl, mix the bread flour and water until no dry flour remains.
  2. Add the sourdough starter and salt, and mix until well combined.
  3. Cover the bowl with a damp cloth and let it rest for 30 minutes.
  4. Perform stretch and folds every 30 minutes for the next 2-3 hours.
  5. Shape the dough into a round loaf and place it in a floured proofing basket.
  6. Cover and let it rise for 2-4 hours at room temperature or overnight in the fridge.
  7. Preheat the oven to 450°F (232°C) with a Dutch oven inside.
  8. Carefully transfer the dough to the hot Dutch oven, cover, and bake for 30 minutes.
  9. Remove the lid and bake for an additional 15-20 minutes until golden brown.
  10. Let the bread cool on a wire rack before slicing.
