Asian Chicken Noodle Salad Lunch Box

A quick and flavorful Asian-inspired chicken noodle salad packed with fresh vegetables and a tangy dressing. Perfect for a light lunch on the go.

  • 200g cooked chicken breast, shredded
  • 150g rice noodles, cooked
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1/2 cucumber, thinly sliced
  • 2 green onions, chopped
  • 1/4 cup chopped cilantro
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1/2 tsp grated ginger
  • 1 tbsp sesame seeds

Instructions

  1. Cook rice noodles according to package instructions. Rinse under cold water and drain.
  2. In a large bowl, combine shredded chicken, cabbage, carrot, cucumber, green onions, and cilantro.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and ginger to make the dressing.
  4. Add the cooled noodles to the vegetable mixture and pour the dressing over. Toss to combine.
  5. Sprinkle with sesame seeds before serving.
  6. Divide into lunch boxes and refrigerate until ready to eat.

Notes

  • Add a squeeze of lime for extra freshness.
  • Use leftover rotisserie chicken for convenience.
  • Substitute rice noodles with soba noodles if preferred.
