Asian Sesame Noodle Salad

A refreshing and flavorful noodle salad with an Asian-inspired sesame dressing. Perfect for a light meal or side dish.

  • 8 oz soba noodles or spaghetti
  • 2 cups shredded cabbage
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 1/4 cup cilantro, chopped
  • 2 tbsp sesame seeds, toasted
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Cook noodles according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and red pepper flakes.
  3. Add the cooked noodles, cabbage, bell pepper, carrot, and green onions to the bowl.
  4. Toss everything together until well coated with the dressing.
  5. Garnish with cilantro and sesame seeds before serving.

Notes

  • Substitute soba noodles with whole wheat or rice noodles if preferred.
  • Add shredded chicken or tofu for extra protein.
  • Store leftovers in an airtight container for up to 3 days.
