  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, rinsed
  • 1 cup corn
  • 1 lime, juiced
  • Salt and pepper to taste
  • Tortilla strips, avocado, cilantro, and sour cream for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and jalapeño. Cook until softened.
  3. Stir in cumin and chili powder. Cook for 1 minute.
  4. Add diced tomatoes, chicken broth, chicken, black beans, and corn.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Stir in lime juice. Season with salt and pepper.
  7. Serve hot, garnished with tortilla strips, avocado, cilantro, and sour cream.

Notes

  • For extra spice, leave the seeds in the jalapeño.
  • Use rotisserie chicken for a quick option.
