Ingredients

  • 4 cups mixed greens
  • 1 cup roasted butternut squash, cubed
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup pumpkin seeds
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F. Roast cubed butternut squash for 20 minutes.
  2. In a large bowl, combine mixed greens, roasted squash, cranberries, feta, and pumpkin seeds.
  3. Whisk olive oil, apple cider vinegar, honey, salt, and pepper in a small bowl.
  4. Drizzle dressing over salad and toss gently.
