  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, sliced
  • 1 grapefruit, segmented
  • 1 orange, segmented
  • 2 cups mixed greens
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat grill to medium-high heat.
  2. Toss shrimp with 1 tbsp olive oil, salt, and pepper.
  3. Grill shrimp for 2-3 minutes per side until pink and cooked through.
  4. In a small bowl, whisk together lime juice, honey, and remaining olive oil.
  5. Arrange mixed greens on a plate.
  6. Top with grilled shrimp, avocado slices, grapefruit, orange segments, and red onion.
