Ingredients

  • 1 lb (450 g) ground beef (80/20)
  • 4 oz (115 g) goat cheese
  • 8 slices bacon
  • 1 large yellow onion, thinly sliced
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 4 brioche burger buns
  • 4 lettuce leaves
  • 4 tomato slices

Instructions

  1. Caramelize Onions:
  2. Heat olive oil in a pan over medium heat. Add sliced onions and cook slowly for 15–20 minutes, stirring occasionally, until golden brown and soft. Set aside.
  3. Cook Bacon:
  4. In another pan, cook bacon strips until crispy. Drain on paper towels.
  5. Prepare Patties:
  6. Divide ground beef into 4 equal portions. Season with salt and pepper. Form patties, creating a small well in the center to hold goat cheese.
  7. Add Goat Cheese:
  8. Place a spoonful of goat cheese in the center of each patty, then cover with another thin layer of beef and seal the edges to enclose the cheese.
  9. Cook Patties:
  10. Grill or pan-fry patties over medium-high heat for about 4–5 minutes per side, or until cooked through and cheese is melted.
  11. Assemble Burgers:
  12. Toast the buns lightly. Layer with lettuce, burger patty, caramelized onions, tomato slices, and crispy bacon. Top with the bun and serve immediately.

Notes

  • For a lighter version, use turkey or chicken ground meat.
  • You can make caramelized onions ahead and store them in the fridge for up to 3 days.
  • Add avocado slices for extra creaminess.
