  • 1 package of gnocchi (about 16 oz)
  • 1 block of feta cheese (about 8 oz)
  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, olive oil, minced garlic, oregano, salt, and pepper.
  3. Place the block of feta cheese in the center of the dish.
  4. Bake in the preheated oven for 25-30 minutes, until the tomatoes are blistered and the feta is soft.
  5. Meanwhile, cook the gnocchi according to package instructions.
  6. Once the feta and tomatoes are done, remove from the oven and stir to combine.
  7. Add the cooked gnocchi to the baking dish and mix well.
  8. Garnish with fresh basil before serving.

Notes

  • For a spicier version, add red pepper flakes to the tomato mixture.
