Banana oat cookies

Delicious and healthy banana oat cookies that are easy to make and perfect for a snack.

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, peanut butter, honey or maple syrup, vanilla extract, baking powder, and salt to the mashed bananas. Mix until well combined.
  4. If desired, fold in the chocolate chips.
  5. Drop spoonfuls of the cookie mixture onto a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes or until the edges are golden brown.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
