Ingredients

Scale
  • 1 lb boneless, skinless chicken breast

  • 1 cup cooked rice (white, brown, or cauliflower)

  • 1 cup mixed veggies (broccoli, bell peppers, carrots, etc.)

  • 2 tablespoons olive oil

  • Salt and pepper to taste

For the Sauce:

  • 1/2 cup mayonnaise

  • 2 tablespoons sriracha (adjust to taste)

  • 1 tablespoon honey

  • 1 teaspoon garlic powder

  • 1 teaspoon lime juice

Instructions

  • Cook the Rice: Prepare rice as directed on the package. Set aside.

  • Prep the Chicken: Cut chicken into bite-sized pieces, season with salt and pepper.

  • Cook the Chicken: Heat oil in a skillet over medium-high. Sauté chicken 6–8 minutes until golden brown and fully cooked.

  • Make the Sauce: Mix mayonnaise, sriracha, honey, garlic powder, and lime juice in a bowl. Adjust to taste.

  • Add Veggies: Toss in mixed vegetables and cook 2–3 minutes until just tender.

  • Combine and Serve: Remove from heat, coat chicken and veggies in sauce, and serve over rice. Garnish with green onions, sesame seeds, or cheddar cheese.

Notes

  • Use a meat thermometer (165°F for doneness).

  • Adjust sauce heat/sweetness to preference.

  • Don’t overcook veggies—they should stay crisp.

  • Try cheddar cheese for a rich twist.
