Banoffee Cake combines moist banana cake layers with rich dulce de leche, fluffy whipped vanilla frosting, and sweet caramel sauce. Inspired by the classic banoffee pie, this show-stopping dessert brings together warm flavors and smooth textures in every slice.

Ingredients

Toffee Filling / Dulce de Leche
• 1 can (14 oz) sweetened condensed milk – $2.50

Banana Cake Layers
• 1½ cups (450 g) mashed ripe bananas (~3–4 bananas) – $1.50
• 2 tsp (8 g) lemon juice – $0.10
• 3 cups (375 g) all‑purpose flour – $0.60
• 1 tsp baking powder – $0.05
• 1 tsp baking soda – $0.05
• ½ tsp salt – $0.02
• 1 cup (226 g) unsalted butter, room temp – $1.20
• 1 cup (200 g) granulated sugar – $0.30
• ⅔ cup (133 g) brown sugar – $0.20
• 3 large eggs – $0.60
• 2 tsp vanilla extract – $0.25
• 1½ cups sour cream or buttermilk – $1.00
• ¾ cup (135 g) mini chocolate chips (optional) – $0.80

Whipped Vanilla Frosting
• 2 cups (452 g) unsalted butter – $2.40
• 3 Tbsp heavy cream – $0.30
• 2 tsp vanilla extract – $0.25
• ½ tsp salt – $0.02
• 6 cups (750 g) powdered sugar – $1.20
• ¼ cup pasteurized egg whites (optional) – $0.50

Additional
• 4–5 ripe bananas for layering – $2.00
• Caramel sauce for topping – $1.00

Instructions

  • Make the Toffee Filling: Simmer unopened can of condensed milk in water for 2 hours. Cool completely before opening.

  • Preheat the oven to 350°F (175°C). Grease and line three 8-inch round pans.

  • Prepare the Batter: Mash bananas with lemon juice. Whisk flour, baking powder, baking soda, and salt in a large bowl. Cream butter, granulated sugar, and brown sugar. Add eggs and vanilla. Alternate adding sour cream and dry ingredients. Fold in bananas and optional chocolate.

  • Bake: Divide into pans. Bake 28–32 minutes. Cool completely before assembling.

  • Frosting: Whip butter until fluffy. Add cream, vanilla, salt, and powdered sugar gradually. Whip in egg whites if using.

 

  • Assemble the Cake: Level each layer (remove the top of the cake if needed). Pipe frosting dam, spread dulce de leche, and add banana slices between layers. Chill between steps. Finish with frosting and drizzle caramel sauce on top.

Notes

Chill the cake between stacking and final decorating to lock in the structure. Add sliced bananas just before serving to keep them fresh.
