This banoffee flapjack recipe combines the rich, sweet flavor of ripe bananas, golden syrup, and brown sugar into a chewy, golden oat bar that’s ready in just 20 minutes. Perfect for quick snacks, lunchboxes, or a comforting treat with your afternoon tea.

Ingredients

  • 175g butter

  • 125g dark brown sugar

  • 125g soft light brown sugar

  • 3 tablespoons golden syrup

  • 3 tablespoons honey

  • 1 medium banana – halved lengthways and sliced

  • 250g jumbo oats

  • 50g ground almonds

Instructions

  • Preheat the oven to 180°C and lightly oil a traybake tin (such as a Swiss roll tin).

  • In a large bowl, combine jumbo oats, ground almonds, and sliced banana. Mix well to evenly distribute the banana.

  • In a saucepan, melt butter, dark brown sugar, soft light brown sugar, golden syrup, and honey over low heat. Stir until fully combined.

  • Pour the melted mixture over the oat mixture in the large bowl. Stir well to coat all ingredients.

  • Press the mixture evenly into the prepared tin.

  • Bake for 20–25 minutes until golden at the edges.

  • Allow to cool slightly in the tin, then cut into squares while still warm.

  • Let cool completely before removing from the tin and serving.

Notes

  • Use overripe bananas for the best flavor and texture.

  • Add chocolate chips or chopped nuts for variation.

  • Store in an airtight container for up to 5 days or freeze for longer storage.
