BBQ Chicken Skewer Salad

  • 1/4 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the cubed chicken, BBQ sauce, olive oil, garlic powder, onion powder, salt, and pepper. Mix well to coat the chicken.
  3. Thread the marinated chicken onto skewers.
  4. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked.
  5. While the chicken is grilling, prepare the salad by combining the mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese in a large bowl.
  6. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before removing it from the skewers.
  7. Add the grilled chicken to the salad and drizzle with balsamic vinaigrette. Toss gently to combine.
