Beef and Barley Soup

  • 1 lb beef stew meat, cut into cubes
  • 1 cup barley
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef stew meat over medium heat.
  2. Add the onion, carrots, celery, and garlic; sauté until the vegetables are tender.
  3. Stir in the barley, beef broth, diced tomatoes, thyme, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beef is tender.
  5. Season with salt and pepper to taste before serving.

Notes

  • For a thicker soup, you can add more barley.
  • This soup can be made in a slow cooker; just adjust the cooking time accordingly.
