  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green beans, trimmed
  • 1 cup peas
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Stir in the onion and garlic, cooking until softened.
  4. Add the carrots, potatoes, green beans, and peas.
  5. Pour in the beef broth and add the tomato paste, thyme, and rosemary.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • This stew can be made in a slow cooker; just adjust the cooking time accordingly.
