  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup erythritol or preferred sweetener
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup erythritol or preferred sweetener (for filling)
  • 3 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix almond flour, cocoa powder, erythritol, and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In another bowl, beat the cream cheese until smooth.
  5. Add sour cream, erythritol, eggs, and vanilla extract to the cream cheese and mix until well combined.
  6. Pour the filling over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set.
  8. Let it cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a chocolate version, add melted dark chocolate to the filling.
  • Ensure all ingredients are at room temperature for a smoother batter.
  • Top with fresh berries or sugar-free chocolate sauce if desired.
