  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 cup shredded cheese (optional)
  • 1 cup sour cream (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a large pot, brown the ground beef and onion over medium heat until the meat is no longer pink.
  2. Add the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and beef broth to the pot.
  3. Stir well and bring to a boil.
  4. Reduce heat and let simmer for 20-30 minutes, stirring occasionally.
  5. Serve hot, topped with cheese, sour cream, and cilantro if desired.
