  • 2 cups sweet potatoes, peeled and cubed

  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the chopped carrots, parsnips, sweet potatoes, and red onions.
  3. Drizzle the olive oil over the vegetables and sprinkle with salt, pepper, rosemary, and thyme.
  4. Toss the vegetables until they are evenly coated with the oil and seasonings.
