Buckwheat Pancakes Wild Berry

Fluffy buckwheat pancakes topped with wild berries for a nutritious and delicious breakfast.

  • 1 cup buckwheat flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 egg
  • 1 tbsp melted butter
  • 1/2 cup wild berries (blueberries, raspberries, blackberries)

Instructions

  1. Mix buckwheat flour, sugar, baking powder, and salt in a bowl.
  2. Add milk, egg, and melted butter. Stir until smooth.
  3. Heat a pan over medium heat and lightly grease it.
  4. Pour 1/4 cup batter for each pancake.
  5. Cook until bubbles form, then flip and cook the other side.
  6. Serve hot with wild berries on top.

Notes

  • Use fresh or frozen wild berries.
  • Adjust sweetness to taste.
  • For a vegan version, replace milk with almond milk and egg with flaxseed.
