A budget-friendly and healthy meal with quinoa, black beans, and fresh vegetables for a tasty taco bowl.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 lime, juiced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 cup chopped cilantro

Instructions

  1. Rinse quinoa and cook it in 2 cups water for 15 minutes or until fluffy.
  2. In a bowl, mix black beans, corn, and diced red bell pepper.
  3. Add cumin, chili powder, salt, and lime juice to the quinoa and stir well.
  4. Divide the quinoa into serving bowls.
  5. Top with the black bean mixture, avocado slices, and chopped cilantro.

Notes

  • Use frozen corn if fresh isn’t available.
  • Add hot sauce for extra spice.
