  • 1/4 cup brown sugar
  • 4 garlic cloves, minced

  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp black pepper
  • 1 scotch bonnet pepper, minced (optional for extra heat)

Instructions

  2. Whisk until sugar dissolves.
  3. Pour marinade over meat or fish.
  4. Cover and refrigerate for at least 2 hours, preferably overnight.
  5. Grill or bake as desired.
