Champagne Poached Lobster with Lemon Cream Sauce

  • 2 live lobsters (1.5 lbs each)
  • 2 cups champagne
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 shallot (minced)
  • 1 sprig fresh thyme

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add lobsters and cook for 8 minutes. Remove and let cool.
  3. Remove meat from shells and set aside.
  4. In a saucepan, simmer champagne, shallot, and thyme for 5 minutes.
  5. Strain the mixture and return to the pan.
  6. Add cream, lemon zest, and juice. Simmer for 3 minutes.
  7. Stir in butter, salt, and pepper.
  8. Add lobster meat and heat for 2 minutes.
  9. Serve immediately.

  • Use dry champagne for best results.
  • Adjust lemon juice to taste.
  • Serve with crusty bread or over pasta.
