Ingredients

  • lbs ground beef (80/20 recommended)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 4 oz sharp cheddar cheese, cut into 12 cubes
  • 12 slices thick-cut bacon
  • ½ cup BBQ sauce (your choice of flavor)
  • Toothpicks (for securing bacon)

Instructions

  1. Preheat oven to 375°F (190°C) or preheat grill to medium heat.
  2. Mix the ground beef with garlic powder, onion powder, salt, and pepper. Do not overmix.
  3. Portion into 12 even balls. Flatten each and place a cube of cheddar in the center. Wrap the beef around the cheese, sealing it completely.
  4. Wrap each ball with a strip of thick-cut bacon, stretching the strip slightly. Secure with a toothpick.
  5. Bake or Grill:
  6. • Oven: Place on a baking sheet with a rack and bake for 25–30 minutes.
  7. • Grill: Cook over indirect heat, turning occasionally for even browning.
  8. Glaze with BBQ sauce during the last 5 minutes of cooking.
  9. Rest for 5 minutes before serving.
