Cheesy Bacon Cauliflower Mash

A creamy and flavorful low-carb alternative to mashed potatoes, made with cauliflower, cheese, and bacon.

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 4 slices of bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter
  • 1/4 cup heavy cream
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp chopped chives (optional)

Instructions

  1. Steam or boil the cauliflower florets until tender, about 10 minutes.
  2. Drain the cauliflower and transfer to a food processor.
  3. Add butter, heavy cream, garlic powder, salt, and pepper. Blend until smooth.
  4. Fold in the shredded cheddar cheese and crumbled bacon.
  5. Garnish with chopped chives if desired. Serve warm.
