Cheesy Ground Beef & Potato Casserole (One-Pan Dinner!)

A delicious and easy one-pan dinner featuring cheesy ground beef and tender potatoes, perfect for a family meal.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, sliced
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat, then drain excess fat.
  3. Add chopped onion and minced garlic to the skillet and sauté until softened.
  4. In a large bowl, combine the cream of mushroom soup, milk, salt, and pepper.
  5. Layer half of the sliced potatoes in a greased baking dish.
  6. Spread the beef mixture over the potatoes.
  7. Pour the soup mixture over the beef and layer the remaining potatoes on top.
  8. Cover with aluminum foil and bake for 45 minutes.
  9. Remove foil, sprinkle cheddar cheese on top, and bake for an additional 15 minutes until cheese is melted and bubbly.

Notes

  • Feel free to add vegetables like peas or corn for extra nutrition.
  • For a spicier version, add diced jalapeños or hot sauce.
  • This casserole can be made ahead of time and stored in the refrigerator before baking.
