Chicken Alfredo Stuffed Peppers

A delicious twist on classic stuffed peppers, filled with creamy chicken Alfredo and baked to perfection.

Ingredients

  • 4 large bell peppers
  • 2 cups cooked chicken, shredded
  • 1 cup Alfredo sauce
  • 1 cup cooked rice
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a bowl, mix chicken, Alfredo sauce, rice, garlic powder, Italian seasoning, salt, and pepper.
  4. Stuff the peppers with the mixture.
  5. Top with mozzarella and Parmesan cheese.
  6. Bake for 25-30 minutes until peppers are tender.
  7. Serve hot.

  • Use any color bell peppers for variety.
  • Substitute quinoa for rice if preferred.
