Chicken Enchiladas

A delicious and easy-to-make recipe for chicken enchiladas that will become your new favorite dish.

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup chopped onions
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add shredded chicken, cumin, garlic powder, salt, and pepper to the skillet and mix well.
  4. Warm the corn tortillas in a microwave or on a skillet to make them pliable.
  5. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas.
  8. Sprinkle shredded cheese on top.
  9. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  10. Serve hot with sour cream on the side.

Notes

  • Feel free to add black beans or corn for extra flavor and texture.
  • Can be made ahead of time and stored in the refrigerator before baking.
  • For a spicier version, add jalapeños to the chicken mixture.
