Chicken Fajita Quesadillas

A quick and easy meal with chicken, peppers, and cheese folded into a tortilla.

Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 tbsp olive oil
  • 1 tsp fajita seasoning
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chicken, bell pepper, and onion. Cook until chicken is done.
  3. Sprinkle fajita seasoning and stir well.
  4. Place a tortilla on a clean surface. Spread half the chicken mixture on one side.
  5. Sprinkle cheese over the chicken mixture.
  6. Fold the tortilla in half.
  7. Cook in a pan until golden brown on both sides.
  8. Repeat for the remaining tortillas.
  9. Cut into wedges and serve.

Notes

  • Use pre-cooked chicken for faster prep.
  • Add jalapeños for extra heat.
  • Serve with sour cream or salsa.
