Chicken Gnocchi Soup

A creamy and comforting soup made with tender chicken, soft gnocchi, and fresh vegetables.

  • 1 lb boneless, skinless chicken breast, diced
  • 1 package (16 oz) potato gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded carrots
  • 1 cup chopped spinach
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until no longer pink, about 5 minutes.
  3. Add onion, garlic, and carrots. Cook for 3 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Add gnocchi and cook for 3-4 minutes until they float.
  6. Stir in spinach, heavy cream, thyme, salt, and pepper.
  7. Simmer for 5 minutes until heated through.

Notes

  • Use fresh spinach for best texture.
  • Store leftovers in the refrigerator for up to 3 days.
  • Add more broth if the soup thickens too much.
