Chicken Parmesan Soup

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup uncooked pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sauté until softened.
  2. Add the chicken breasts and cook until browned on both sides.
  3. Pour in the chicken broth and diced tomatoes, then add basil and oregano.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Add uncooked pasta and cook until tender, about 10 minutes.
  7. Stir in mozzarella and Parmesan cheese until melted.
  8. Season with salt and pepper to taste before serving.

  • For a thicker soup, add more pasta or reduce the amount of broth.
