  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 cup frozen peas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until softened.
  2. Add garlic and cook for another minute.
  3. Stir in the diced chicken and cook until browned.
  4. Sprinkle flour over the mixture and stir to combine.
  5. Gradually add chicken broth, stirring constantly to avoid lumps.
  6. Add potatoes, thyme, and rosemary. Bring to a boil, then reduce heat and simmer for 15 minutes.
  7. Stir in heavy cream and frozen peas. Cook for an additional 5 minutes.
  8. Season with salt and pepper to taste. Serve warm.
