  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro

Instructions

  1. In a large pot, sauté the onion, bell pepper, and garlic until softened.
  2. Add the chicken breasts, black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
  3. Bring the mixture to a boil, then reduce heat and let simmer for 20-25 minutes.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Season with salt and pepper to taste.
