4 chicken thighs
1 cup fresh parsley, chopped
1/2 cup olive oil
1/4 cup red wine vinegar
4 cloves garlic, minced
1 teaspoon red pepper flakes
Salt and pepper to taste
Instructions
In a bowl, combine parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
Place chicken thighs in a resealable bag and pour half of the chimichurri sauce over them. Seal the bag and marinate in the refrigerator for at least 1 hour.
Preheat the grill to medium-high heat.
Remove chicken from the marinade and discard the used marinade.
Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
Serve the chicken thighs with the remaining chimichurri sauce drizzled on top.
Notes
For best flavor, marinate the chicken thighs overnight.
This dish pairs well with grilled vegetables or a fresh salad.
Chimichurri sauce can be stored in the refrigerator for up to a week.
