Chimichurri Chicken Thighs

  • 4 chicken thighs
  • 1 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
  2. Place chicken thighs in a resealable bag and pour half of the chimichurri sauce over them. Seal the bag and marinate in the refrigerator for at least 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and discard the used marinade.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  6. Serve the chicken thighs with the remaining chimichurri sauce drizzled on top.
