Ingredients

  • 4 pork chops (1 inch thick)
  • 1 cup apple cider
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 apples, thinly sliced
  • 1/2 small cabbage, shredded
  • 1/4 cup chopped red onion
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Season pork chops with salt and pepper.
  2. Heat olive oil in a pan over medium heat. Cook pork chops for 4-5 minutes per side. Remove and set aside.
  3. In the same pan, add apple cider, brown sugar, Dijon mustard, and apple cider vinegar. Simmer for 5 minutes until thickened.
  4. Return pork chops to the pan, coating them with the glaze. Cook for 2 more minutes.
  5. In a bowl, mix sliced apples, shredded cabbage, red onion, mayonnaise, and lemon juice to make the slaw.
  6. Serve pork chops with apple slaw on the side.

Notes

  • Use firm apples like Granny Smith for the slaw.
  • Let the pork chops rest for 5 minutes before serving.
  • Adjust glaze thickness by simmering longer if needed.
