  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup corn
  • 1/2 cup black beans, rinsed and drained

Instructions

  1. In a bowl, mix lime juice, cilantro, garlic, cumin, chili powder, salt, and pepper.
  2. Marinate the flank steak in the mixture for at least 30 minutes.
  3. Grill or pan-sear the steak over medium-high heat for about 5-7 minutes per side, or until desired doneness.
  4. Let the steak rest for a few minutes before slicing it thinly.
