Cinnamon Swirl Morning Muffins

Delicious and easy-to-make cinnamon swirl muffins perfect for breakfast or a snack.

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk flour, baking powder, salt, and granulated sugar.
  3. In another bowl, beat egg, milk, oil, and vanilla. Pour into dry ingredients and mix until just combined.
  4. In a small bowl, mix brown sugar and cinnamon.
  5. Fill muffin cups halfway with batter. Sprinkle cinnamon-sugar mix, then top with remaining batter.
  6. Bake for 20 minutes or until a toothpick comes out clean.
  7. Let cool before serving.

Notes

  • For extra flavor, add chopped nuts or raisins.
  • Store in an airtight container for up to 3 days.
  • Reheat in the microwave for 10 seconds if desired.
