Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shelled pistachios
  • Zest of 1 orange
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the pistachios and citrus zests.
  7. Divide the dough in half and shape each half into a log on the prepared baking sheet.
  8. Bake for 25-30 minutes or until golden brown.
  9. Remove from the oven and let cool for 10 minutes, then slice the logs into biscotti pieces.
  10. Return the biscotti to the oven and bake for an additional 10-15 minutes until crisp.
