Clam Chowder

A creamy and hearty soup made with clams, potatoes, and a blend of seasonings, perfect for a comforting meal.

Ingredients

  • 2 cups of chopped clams
  • 4 cups of diced potatoes
  • 1 cup of chopped onion
  • 1 cup of chopped celery
  • 4 cups of clam juice
  • 1 cup of heavy cream
  • 4 tablespoons of butter
  • Salt and pepper to taste
  • 1 teaspoon of thyme
  • 1 bay leaf

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and celery, and sauté until softened.
  3. Stir in the diced potatoes, clam juice, thyme, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Add the chopped clams and heavy cream, and heat through.
  6. Season with salt and pepper to taste.
  7. Remove the bay leaf before serving.

Notes

  • For a thicker chowder, mash some of the potatoes before adding the clams.
  • Serve with crusty bread for a complete meal.
  • Can be made ahead of time and reheated.
