A hearty and comforting classic beef stew recipe that is perfect for cold days.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season the beef cubes with salt and pepper, then brown them in batches.
  3. Add the chopped onion and minced garlic, cooking until softened.
  4. Stir in the tomato paste, thyme, and bay leaf.
  5. Add the beef broth, carrots, and potatoes to the pot.
  6. Bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours until the beef is tender.
  7. Remove the bay leaf before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • Feel free to add other vegetables like peas or green beans.
