Classic Loaded Potato Soup

  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the chopped onion until translucent.
  2. Add the diced potatoes and broth, and bring to a boil.
  3. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
