Classic Meatloaf with Mashed Potatoes

  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup ketchup
  • 1/2 cup chopped onion
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large potatoes
  • 1/2 cup butter
  • 1/2 cup milk (for mashed potatoes)
  • Salt and pepper to taste (for mashed potatoes)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, milk, ketchup, chopped onion, eggs, salt, and pepper.
  3. Mix until well combined and shape into a loaf.
  4. Place the meatloaf in a baking dish and bake for 1 hour.
  5. While the meatloaf is baking, peel and chop the potatoes.
  6. Boil the potatoes in salted water until tender, about 15-20 minutes.
  7. Drain the potatoes and mash them with butter and milk until smooth.
  8. Season the mashed potatoes with salt and pepper to taste.
  9. Once the meatloaf is done, let it rest for a few minutes before slicing.
  10. Serve the meatloaf with a generous portion of mashed potatoes.
