Coconut Lime Chicken Crockpot

A flavorful and easy-to-make chicken dish with coconut and lime, cooked in a crockpot.

  • 4 boneless, skinless chicken breasts
  • 1 can (13.5 oz) coconut milk
  • 2 limes, juiced and zested
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp soy sauce
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Place chicken breasts in the crockpot.
  2. In a bowl, mix coconut milk, lime juice, lime zest, garlic, ginger, soy sauce, cumin, paprika, salt, and pepper.
  3. Pour the mixture over the chicken.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Shred the chicken and stir in chopped cilantro before serving.
