Tender chicken skewers marinated in coconut milk and lime, grilled to perfection.

Ingredients

  • 500g chicken breast, cut into chunks
  • 1 cup coconut milk
  • 3 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped cilantro
  • 1 tbsp olive oil

Instructions

  1. In a bowl, mix coconut milk, lime juice, garlic, cumin, paprika, salt, and pepper.
  2. Add chicken chunks to the marinade and refrigerate for 1 hour.
  3. Thread marinated chicken onto skewers.
  4. Heat grill or pan and brush with olive oil.
  5. Grill skewers for 5-7 minutes per side until fully cooked.
  6. Sprinkle with chopped cilantro before serving.

Notes

  • Soak wooden skewers in water for 30 minutes to prevent burning.
  • Marinate longer for deeper flavor (up to 4 hours).
